FF8: A Cool Treat

I know you’re all leaving work thinking, “It is so hot out! I wish I had a no bake dessert in my fridge to come home to!” Well! Don’t worry – I read your minds! (Just kidding, I am the only one who’s thinking that right now)

Regardless of whether you’ve thought about this or not – I have the perfect (and surprisingly easy) treat to share today! It’s just 5 ingredients and you don’t have to go near the oven! Phew. I don’t need to sweat in my kitchen just to have something delicious ready for dessert.

I hope you enjoy my recipe for Mint Chocolate Ice Cubes – think peppermint patty, but cubes!

Mint Chocolate Ice Cubes

It’s like a York Peppermint Patty but without all the added processed candy junk 🙂

Ingredients

These 5 ingredients are all you need. Coconut oil, coconut butter, honey, chocolate, and peppermint extract. Coconut butter sounds rogue and kind of niche, but its just ground up coconut flakes, so if you have those around just throw them in the food processor or blender and that will work too!

I was feeling extra lazy and did not want to buy cupcake liners or make them out of parchment paper, so I thought of using my silicone ice cube trays! It was perfect and the treats popped right out. Any ice cube tray should work – just give it a quick spray with oil or grease with butter, so the chocolate doesn’t stick!

Coconut butter can be a little firm out of the jar, so you might need to microwave it for 10-20 seconds to soften in up. The measurements for honey and peppermint extract can be changed based on your taste preferences, so make sure you try the mixture along the way!

Form the filling into balls and put in the freezer to chill for about 10 minutes.

Now for the assembly!

Add a chocolate layer on the bottom of the tray, and put it in the freezer to chill for a few minutes. Add the chilled filling, and top with more melted chocolate. Stick the tray back in the freezer and give them 10 – 20 minutes to firm up.

Pop ’em out of the mold and you are ready to go! Store them in the freezer or refrigerator and indulge whenever the craving (or heat) hits!

Recipe

Ingredients
1/3 cup coconut butter
1 (ish) tablespoon honey
2 (ish) teaspoons peppermint extract
1 bag chocolate chips (aprox 10oz)
1 tablespoon coconut oil

Directions
Combine coconut butter, honey, and peppermint extract in a bowl. Taste as you add the honey and peppermint because quantities can be altered based on preference for more/less sweetness and mint flavor. Form the paste like filling into little balls and place in the freezer to chill. While they filling is cooling, melt the chocolate with the coconut oil in the microwave. Heat for short increments, so the chocolate does not seize. Pour a thin layer of melted chocolate into the bottom of the ice cube tray and place in the freezer to solidify (about 10 minutes). Add the chilled filling on top of the solid layer of chocolate and add the rest of the chocolate on top. Put the tray back in the freezer for another 20 minutes. Pop the cubes out of the mold. Enjoy! Store in the freezer or refrigerator!
